Chunky Semi Ripe Mango Chutney Recipe

| 600 gms. Peeled raw mangoes, chopped into tiny squares | ||
| Sugar | 900 Gram | |
| Chilli powder | 1 Tablespoon | |
| 1 tbsp. ground in equal parts, cirinamon, cloves, black pepper and cardamom seeds | ||
| Seedless raisins | 1/2 Cup (16 tbs) | |
| 1 tbsp. fresh ginger, cut in julienne | ||
| Salt | To Taste | |
Directions
Place the mango pieces and sugar in a sturdy, thick-bottomed vessel. Allow the sugar to melt.
Place on a medium flame and keep stirring until the sugar has completely melted. Add the ginger pieces.
When the mango has softened and the syrup has become thick and sticky, add a little salt. Stir and add the raisins. Then add the chilli powder and the ground spices. Stir vigorously for 5 minutes and remove from fire.
Cool. Fill into airtight jars.
