Chunky Lentil Salad Recipe

Ingredients
125g red lentils, rinsed and drained
2 tomatoes, chopped
3 tblspn chopped fresh parsley
3 tblspn Vinaigrette
2 tblspn olive oil
1 clove garlic, crushed

Directions
Place lentils in a bowl.
Add boiling water to cover.
Set aside for 15 minutes to soften.
Strain lentils through a sieve lined with a clean tea towel.
Squeeze as much moisture as possible from lentils.
Tip them into a bowl.
Stir in tomatoes and parsley.
Whisk vinaigrette, olive oil and garlic in a small bowl.
Add the dressing to lentil and tomato salad; toss fently.
Cover and set aside for at least 1 hour at room temperature.
Just before serving, add salt to taste.
Add boiling water to cover.
Set aside for 15 minutes to soften.
