Christmas Relish Recipe
Ingredients
| Zucchini | 12 Cup (192 tbs), coarsely ground | |
| Green peppers | 2 , coarsely ground | |
| Sweet peppers | 2 , chopped | |
| Onions | 4 Cup (64 tbs), coarsely ground | |
| Pickling salt | 1⁄3 Cup (5.33 tbs) | |
| Turmeric powder | 1 Teaspoon | |
| Curry powder | 1 Teaspoon | |
| Celery seed | 1 Teaspoon | |
| Cornstarch | 1 Tablespoon | |
| Pepper | 1⁄2 Teaspoon | |
| Vinegar | 3 Cup (48 tbs) | |
| Sugar | 4 1⁄2 Cup (72 tbs) |
Directions
In large enamel pan, mix pickling salt into vegetables.
Let stand overnight.
Drain and rinse with cold water.
Mix together rest of ingredients; add to vegetables in large enamel pan; boil 20 minutes.
Pour into sterilized jars and seal.
