Christmas Coleslaw Recipe

Not only a gourmet, but anyone can judge how appetizing and flavorful Christmas Coleslaw is. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. Serve this Christmas Coleslaw at the table today and watch it disappear in delight!

Ingredients

 
6 cups shredded green cabbage 1.5 L
 
6 cups shredded red cabbage 1.5 L
 
3 green onions, thinly sliced
 
1 sweet red pepper, julienned
 
1/4 cups dried currants or raisins 50 mL
 
Dressing
 
3 tbsp cider vinegar 50 mL
 
2 tbsp sweet mustard 25 mL
 
1 tbsp packed brown sugar 15 mL
 
1 tsp caraway seeds 5 mL
 
1/2 tsp salt 2 mL
 
1/4 tsp pepper 1 mL
 
Pinch allspice
 
1/3 cup vegetable oil 75 mL
 
Dash hot pepper sauce

Directions

In large bowl, toss together green and red cabbage, onions, red pepper and currants until well mixed.
DRESSING: In bowl, whisk together vinegar, mustard, sugar, caraway seeds, salt, pepper and allspice; gradually whisk in oil and hot pepper sauce until smooth.
Pour over coleslaw; toss to coat.
Cover and refrigerate overnight or for up to 24 hours.
