Ingredients
1 1/2 ounces cream cheese
3 tablespoons milk
2 tablespoons sugar
1 tablespoon unsalted butter
1/4 teaspoon salt
1 teaspoon active dry yeast
1 - 1 1/2 cups flour
1 egg
1/2 cup drained, crushed pineapple
Reserved pineapple syrup
Confectioners' Icing
Green food coloring
Red and green maraschino cherries
Directions
1 Combine cream cheese, milk, sugar, butter, and salt in saucepan. Heat until cheese and butter are melted (120°-130°F).
2 In large bowl, combine yeast, 1 cup flour, and cream cheese mixture. Add egg. Mix thoroughly.
3 Add drained pineapple and enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Knead about 3 minutes. Divide dough into 25 equal pieces and make balls. Arrange in triangle, using 2 pairs of balls for trunk. Place on greased baking sheet.
6 Cover; let rise until double€”about 30 minutes. Bake in a preheated 350°F oven about 30 minutes or until done.
7 Mix icing using reserved pineapple syrup. Drizzle over warm bread. Decorate with red and green cherries.
