Ingredients

 
2 cups flour
 
3/4 cup sugar
 
1 teaspoon baking powder
 
1/4 teaspoon salt
 
Grated rind of 1/2 lemon
 
2/3 cup butter
 
1 tablespoon milk
 
1 egg, lightly beaten
 
Sugar
 
1/4 cup chopped almonds

Directions

In a bowl, combine the flour, sugar, baking powder, salt and lemon rind.
Cut the butter into the flour mixture with a pastry blender or 2 knives.
Add the milk and knead the dough together into a ball.
Wrap in waxed paper and refrigerate 1 hour.
Roll out sections of the dough on a floured board to a 1/8 inch thickness.
Cut rounds using a 2 1/2 inch round cookie cutter.
Cut out the center of the cookies using a thimble.
Knead the centers back into the remaining dough.
Place the rings on a buttered cookie sheet.
Brush with beaten egg and sprinkle with sugar and almonds.
Bake in a preheated 350° oven for 15 to 20 minutes or until golden brown.
Let the rings cool on the baking sheet.
Thread red ribbon through the holes and hang the cookies on the Christmas tree.
