Christmas Pudding Recipe

Christmas Pudding! Come Christmas and everyone gets impatient at the dinner table. Why? Because they know that I will make the families favorite Christmas Pudding! If you try it, I am sure it will become your family favorite too!

Ingredients

 All purpose flour1 1/2 Cup (16 tbs)
 Breadcrumbs2 1/2 Cup (16 tbs)
 Butter1/4 Cup (16 tbs), grated
 Suet3/4 Cup (16 tbs), shredded
 Salt1/2 Teaspoon
 Apple pie spice3/4 Teaspoon
 1 small eating apple, peeled and grated
 Light brown sugar2/3 Cup (16 tbs)
 Sugar1/2 Cup (16 tbs), firmly packed
 Cherries1/4 Cup (16 tbs), candied
 Ground almonds3/4 Cup (16 tbs)
 Mixed dried fruit4 1/2 Cup (16 tbs)
 Grated rind and juice of 1 orange
 Grated rind and juice of 1 lemon
 Molasses1 Tablespoon
 Sherry4 Tablespoon
 4 teaspoons gravy coloring
 Eggs3 Large
 Milk2/3 Cup (16 tbs)
 Extra sugar for dredging

Directions

1 Put the flour and breadcrumbs into a large mixing bowl.
2 Rub in the butter, then mix in the suet.
3 Add the salt, spice, apple, brown and white sugar, glace (candied) cherries, ground almonds, dried fruit and the rind from the orange and the lemon. Mix well.
4 Mix together in a small bowl, the juice of the orange and lemon, the black treacle (molasses), sherry and gravy browning colouring.
5 Beat together the eggs and the milk in another bowl.
6 Stir the liquid ingredients, alternately, into the dry ingredients, mixing well until combined.
7 Divide the mixture between 2 x 900ml/1 1/2 pint (3 3/4 cup) boilable plastic pudding basins (slope sided ovenproof molds). Level the tops. Cover with plastic wrap, and pierce.
8 MICROWAVE EACH PUDDING SEPARATELY. Microwave On power 7 for 12 minutes, giving the dish a half turn, twice during cooking, if necessary. Remove from microwave oven and allow to stand for 15 minutes, covered with foil, before turning out.
9 Dredge with white sugar and serve with brandy sauce or brandy butter.

Making a christmas pudding in the microwave? lol If you are wanting to make a traditional Irish mealing, use your oven and forget the microwave. Am originally from Ireland living here in the US, my mom would smack me if she found me using a microwave for something like this, adding colouring too and she would ask me what in the world are "molasses" :-) odlums.ie is what I use to get the recipee's.
