Christmas Lima And Potatoes Recipe

Ingredients
8-oz pkg Dried Christmas Lima Beans
2 cups (480 ml) cubed potatoes, white, yellow or sweet potatoes
1/2 cup (120 ml) chopped onion
4 cups (960 ml) water or chicken broth
1 tbs (15 ml) chopped Fresh Dill
1/2 tsp (3 1) salt
1/4 tsp (1 ml) pepper
Directions
Place beans in a saucepan with water to cover.
Bring to boiling; boil 2 minutes.
Remove from heat; cover and let stand 1 hour.
Drain beans; in same pan combine beans with potatoes, onion and water or broth.
Bring to boiling; reduce heat.
Simmer, partially covered, for 45-60 minutes, or until beans are tender.
Drain well; stir in dill, salt and pepper.
Bring to boiling; boil 2 minutes.
