Christmas Fruit Balls Recipe
Ingredients
| 3/4 cup chopped mixed red and green candied pineapple | ||
| Pitted dates | 3/4 Cup (16 tbs), chopped | |
| Chopped ginger | 1/4 Cup (16 tbs), candied | |
| Walnuts | 1/2 Cup (16 tbs), chopped | |
| All purpose flour | 2/3 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Eggs | 2 | |
| Sugar | 1 Cup (16 tbs) | |
| Butter/Margarine | 3 Tablespoon, melted | |
| Colored sugar or coconut | ||
Directions
Combine chopped pineapple, dates, ginger and nuts in a bowl.
Sift flour, baking powder and salt over the mixture and mix in well by hand.
Beat eggs and sugar together and add melted margarine.
Stir into the fruit mixture.
When well blended spread evenly in a greased 9 X 9-inch pan.
Bake at 350F for 20 minutes.
Remove from oven and stir once.
Return to oven and bake at 325F for 20 to 30 minutes longer.
Mixture should still be quite soft.
Cool slightly.
Have colored sugar ready.
Take out spoonfuls of the baked fruit mixture and roll in colored sugar to form little balls.
Let cool completely before storing.
