Chow Kan Choy (Crispy Fried Celery) Recipe
Ingredients
6 stalks celery
2 spring onions, chopped
1 tsp. garlic, finely chopped
1 medium carrot, peeled and sliced
1 tsp. fresh ginger, finely chopped
1 tsp. salt
1 tbsp. sherry (optional)
4 tbsps. vegetable oil water
1 tbsp. parsley, finely chopped
Directions
Clean and wash the celery stalks, remove leaves and tough parts of the celery (you can use it for soup) and cut into cubes.
Place water in a pan, add celery cubes and bring to a boil.
Cook for 3 minutes, drain well.
Heat oil in a fry pan, saute onion, garlic, ginger for 1 minute and add celery cubes, carrots, sherry, salt.
Stir well and cook - 3 minutes.
Sprinkle little water over the vegetable and cover, cook over low heat for another 4 minutes.
Remove from heat.
Transfer into a serving dish garnish with parsley.
Serve hot with rice.
Note: Finely chopped green chillies can be added after stage 4 if desired.
NON-VEGETARIAN VERSION: Crispy Fried Celery with Meat:
Add one cup shredded meat at stage 3 before adding celery cubes.
Place water in a pan, add celery cubes and bring to a boil.
Cook for 3 minutes, drain well.
