Beans Chow Chow Recipe
Ingredients
| 1/4 peck string.beans cut in pieces | ||
| 1 head cauliflower, in flowerets | ||
| 3 cups shelled lima beans | ||
| Corn kernels | 3 Cup (16 tbs) | |
| Onions | 1 Quart, chopped | |
| Green peppers | 5 To taste, chopped | |
| 1/4 peck green tomatoes chopped | ||
| Cider vinegar | 3 Quart | |
| 2 clips sugar | ||
| Salt | 1/2 Cup (16 tbs) | |
| Ground mustard | 1/2 Pound | |
| Mustard seed | 2 Tablespoon | |
| Celery seed | 2 Tablespoon | |
| Tumeric | 1 Tablespoon | |
Directions
Prepare string beans, cauliflower, lima beans, and corn and cook together about 25 minutes.
Add chopped vegetables.
Heat vinegar, add combined spices and water, from cooked vegetables.
Add vegetables to vinegar and cook 25 minutes, stirring constantly.
Pour into hot sterilized jars and seal immediately.
