Indian Chow Chow Recipe
Ingredients
| 1 white cabbage, shredded | ||
| 4 green peppers, pith and seeds removed and chopped | ||
| Celery stalks | 4 , chopped | |
| Onions | 6 , chopped | |
| 2 tomatoes, skinned and chopped | ||
| Cucumber | 1 , chopped | |
| 23 ml. / 1 1/2 tablespoons celery seeds | ||
| 15 ml. / 1 tablespoon turmeric | ||
| 10 ml. / 2 teaspoons ground ginger | ||
| 15 ml. / 1 tablespoon ground cloves | ||
| 23 ml. / 1/2 tablespoons salt | ||
| 75 g. / 3 oz. mustard seeds | ||
| 1/2 kg. / 1 lb. brown sugar | ||
| 900 ml. / 1 1/2 pints brown vinegar | ||
Directions
Parboil the cabbage, peppers, celery and onions separately in boiling, salted water, then drain.
Layer the vegetables into hot, sterilized jars, with the remaining vegetables.
Put all the remaining ingredients in a saucepan and bring to the boil.
Simmer for 15 minutes.
Pour over the vegetables, to within 1.25 cm./ 1/2 in.of the top, and seal.
