Ingredients

 1 white cabbage, shredded
 4 green peppers, pith and seeds removed and chopped
 Celery stalks4 , chopped
 Onions6 , chopped
 2 tomatoes, skinned and chopped
 Cucumber1 , chopped
 23 ml. / 1 1/2 tablespoons celery seeds
 15 ml. / 1 tablespoon turmeric
 10 ml. / 2 teaspoons ground ginger
 15 ml. / 1 tablespoon ground cloves
 23 ml. / 1/2 tablespoons salt
 75 g. / 3 oz. mustard seeds
 1/2 kg. / 1 lb. brown sugar
 900 ml. / 1 1/2 pints brown vinegar

Directions

Parboil the cabbage, peppers, celery and onions separately in boiling, salted water, then drain.
Layer the vegetables into hot, sterilized jars, with the remaining vegetables.
Put all the remaining ingredients in a saucepan and bring to the boil.
Simmer for 15 minutes.
Pour over the vegetables, to within 1.25 cm./ 1/2 in.of the top, and seal.
