Ingredients

 
3 large onions
 
5 green tomatoes
 
6 green peppers
 
2 cups green beans cut in 1/2 -inch pieces
 
2 cups cauliflowerets, broken into small buds
 
2 cups fresh corn kernels
 
1/4 cup pickling salt
 
3 cups sugar
 
1 tablespoon mustard seed
 
1 1/2 teaspoons celery seed
 
3/4 teaspoon turmeric
 
2 cups vinegar
 
1 cup water

Directions

Using coarse blade of food grinder, grind onions, tomatoes, and green peppers; combine with green beans, cauliflower, and corn.
Sprinkle with pickling salt; cover and let stand at room temperature overnight.
Rinse and drain.
Combine sugar, mustard seed, celery seed, turmeric, vinegar, and water; pour over vegetables in 4-quart casserole.
Cook, covered, at HIGH for 25 minutes or till boiling.
Cook, covered, at HIGH for 5 minutes.
Seal in hot clean jars; refrigerate.
Relish will keep up to 2 months in refrigerator.
