Chorizo Chili Recipe
There's not a single being who will be able to eat just one, is what I guarantee for this Chorizo Chili. Even though Chorizo Chili is a Main Dish I relish it any time of the day. If you have a lot of Beef on hand then Chorizo Chili is the recipe you should opt for. You will make the right decision of preparing this Chorizo Chili.
Ingredients
8 ounces chorizo or Italian sausage links, sliced
8 ounces beef round steak, cut into 1/2 inch cubes
2 tablespoons cooking oil
1 medium onion, chopped (1/2 cup)
1 small green pepper, chopped
1 clove garlic, minced
2 cups beef broth
1 tablespoon paprika
11/2 teaspoons dried oregano, crushed
1 1/2 teaspoons cumin seed, crushed
1/4 to 1/2 teaspoon ground red pepper
1 15 ounce can hominy, drained
1 4 ounce can chopped green chili peppers
3 flour tortillas, cut into wedges
1/2 cup shredded Cheddar cheese (2 ounces)
Cilantro (optional)
Chili peppers (optional)
Directions
In a 12-inch skillet cook sliced chorizo and beef cubes in hot oil till brown.
Remove meat; set aside.
Reserve 2 tablespoons drippings in skillet.
Cook onion, green pepper, and garlic in drippings till tender but not brown.
Stir meat mixture, beef broth, paprika, oregano, cumin, and red pepper into onion mixture.
Bring to boiling; reduce heat.
Simmer, covered, for 1 1/2 hours, stirring occasionally.
If necessary, spoon off fat.
Stir in hominy and undrained chili peppers.
Simmer, uncovered, for 20 minutes more, stirring occasionally.
Meanwhile, in each serving bowl arrange four or five tortilla wedges, points up, around edge of bowls.
Spoon chili into each bowl.
Sprinkle with cheese.
Garnish with cilantro and chili peppers.
