Chorizo Chicken with Chilli Wedges Recipe
Ingredients
| Sweet potatoes | 2 Large, cut into wedges | |
| Olive oil | 1 Teaspoon | |
| 1/2 tsp dried chilli flakes | ||
| 6-8 thin chorizo slices | ||
| 2 skinless chicken breasts | ||
| Few thyme sprigs, leaves stripped, or 1/2 tsp dried thyme | ||
Directions
GETTING READY
1. Preheat your oven to 220C/fan 200C/gas 7
MAKING
2. On a baking sheet, place the sweet potatoes, toss with some oil, chilli flakes and seasoning
3. Roast for ten minutes for then reduce the temperature to 200C/fan 180C/gas 6
4. Over each of the chicekn breasts, lay half the chorizo slices, overlapping to cover teh chicken and tuck the edges underneath
5. Lift and place into the baking tray nest to the wedges and scatter the wedges with thyme
6. Roast for another twenty minutes, turning the chicen and wedges halfway til golden

7. Serve as appropriate
