Chop Suey Salad Recipe

Ingredients
2 cups diced chicken
1 1/2 cups thinly sliced celery
1 cup coarsely chopped walnuts
4 sweet pickles, cut in strips
2 tablespoons minced onion
2 hard-cooked eggs, chopped
3/4 cup mayonnaise
3 tablespoons lemon juice
Directions
Combine chicken, celery, walnuts, pickles, onion and eggs.
Mix together mayonnaise and lemon juice and blend until smooth.
Add enough of this mixture to chicken mixture to moisten well; season to taste with salt and pepper and chill in refrigerator for 30 minutes.
Heap in a lettuce lined salad bowl and garnish with green pepper rings, raw carrot straw and wal- nut halves.
Serve additional dressing separately.
