Ingredients
8 oz semi sweet chocolate
4 eggs
1 1/4 tablespoons warm water
1 1/4 tablespoons brandy
Cream and grated chocolate for serving
Directions
Break the chocolate into small pieces and melt slowly in a heatproof bowl, over a pan of gently simmering water, or in a double boiler.
Separate the eggs and mix the egg yolks, one at a time, into the melted chocolate.
Stir in the warm water and brandy.
Whisk the egg whites until very stiff and fold into the chocolate.
Pour into small individual dishes or mousse pots.
Cover with clear plastic wrap and refrigerate overnight.
Pour a thin layer of cream on top of each mousse just before serving or decorate with a blob of whipped cream or pipe a rosette of whipped cream on top of each serving.
Sprinkle grated chocolate over cream.
