Chocolate Lovers' Delight Recipe
These chocolate lover' delight muffins are actually little baked treats for the chocolate lover's soul! Baked with chocolate, sugar and chocolate chips these dark muffin treats are hard to resist. Flavored with vanilla for an extra ounce of flavor, these are great when served warm on a cold evening.
Ingredients
3 squares unsweetened chocolate
1/3 cup vegetable oil 75 mL
2 eggs
l tsp vanilla 5mL
11/3 cups milk 325 mL
2 cups all-purpose flour 500 mL
1/2 cup granulated sugar 125 mL
2 tsp baking soda 10 mL
1 cup semi-sweet chocolate chips 250 mL
Directions
In a saucepan over low heat, melt the chocolate with the oil (or microwave on Medium for 2 minutes).
Remove from heat and add eggs, vanilla and milk; blend well.
In a large bowl, combine flour, sugar and baking soda.
Add the chocolate mixture and half the chocolate chips, stirring only until moistened.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Sprinkle with remaining chocolate chips.
Bake in preheated oven for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
HINT: An ice cream scoop makes filling muffin cups a breeze.
