Chocolate Lovelight Cake Recipe

Ingredients
Eggs – 2, separated
Sugar – 1 ½ cups
Cake Flour – 1 ½ cups, sifted before measuring
Baking Soda – 3/4 teaspoon
Salt – ½ teaspoon
Salad Oil – 1/3 cup
Buttermilk or Sour Milk – 1 cup
Unsweetened Chocolate – 2 squares, melted
Directions
GETTING READY
1) Preheat the oven to 350F
2) Grease and flour two 9 x 1 ½ inch round layer pans
MAKING
3) Using an electric mixer, beat the egg whites till frothy
4) Add in the ½ cup sugar and beat till the egg whites are nice and glossy
5) In a bowl mix and sift the remaining baking sugar, flour, baking soda, and salt
6) Using the electric mixer beat in the salad oil and half the quantity of buttermilk scraping down the sides of the bowl constantly
7) Tip in the remaining buttermilk, egg yolks and chocolate beating for a minute more
8) Fold in the egg whites to the batter
9) Spread the batter evenly into the two pans
10) Bake for 30 to 35 minutes till a skewer inserted comes clean
11) Once cooled, frost the cakes with cocoa flavored sweetened whipping cream
