Chocolate Lattice Box Cake Recipe

Chocolate Lattice Box Cake is quite a treat in itself. This bake is packed with the flavors of digestive biscuits, cherries, almond paste and other yummy seasonings. Just give this Chocolate Lattice Box Cake a try.

Ingredients

 
200 g/7 oz plain chocolate
 
175 g/6 oz/3/4 cup butter or margarine
 
45 ml/3 tbsp golden syrup
 
225 g/8 oz digestive biscuits, crushed
 
50 g/2 oz/1/2 cup sultanas
 
75 g/3 oz/3/4 cup glace cherries, halved
 
176 g/6 oz white almond paste
 
Oil for greasing

Directions

Reserve 25 g/1 oz of the chocolate and melt the remainder in a pan with the butter or margarine and the syrup.
Stir in the biscuit crumbs with the sultanas.
Chop two thirds of the cherries and add.
Cut off a third of the almond paste and reserve.
Chop the remainder and add to the pan.
Mix well.
Oil an 18 cm/7 in loose bottomed cake tin (pan) and line the base with non stick baking parchment.
Press in the crumb mixture.
Roll out the reserved almond paste thinly and cut into 12 thin strips.
Lay in a lattice pattern on top of the cake, trimming to fit.
Dot the remaining halved glace cherries in some of the spaces.
Wrap in clingfilm (plastic wrap).
Chill until firm.
Remove from the tin when ready to serve, cut into wedges.
