Chocolate-Custard Filling Recipe

Ingredients

 
1 pkg (6 oz) semisweet-chocolate pieces
 
1/2 cup soft butter or regular margarine
 
2/3 cup sifted confectioners' sugar
 
2 egg yolks
 
1 teaspoon vanilla extract
 
2 egg whites

Directions

Melt chocolate in top of double boiler, over hot water.
Remove from heat; let cool.
In small bowl of electric mixer, at medium speed, beat butter until light.
Add sugar gradual- ly, beating until very light and fluffy.
Add egg yolks, one at a time, beating after each addition.
Gradually beat in chocolate.
Add vanilla.
With rotary beater, beat egg whites just until stiff peaks form.
With rubber scraper, using an un- der-and-over motion, fold egg whites into chocolate mixture just until blended.
Makes 2 cups.
