Chocolate Chunk Banana Muffins Recipe

These chocolate chunk banana muffins lets you indulge in the sinful taste of rich chocolate coupled with the sweet taste of ripe bananas. Baked with sugar and flavored with vanilla, these little muffins are prefect as snacks or with tea or a hot glass milk.

Ingredients

 
1 cup mashed overripe bananas (about 2 medium)
 
1 cup low-fat Miracle Whip 250 mL
 
1/2 cup granulated sugar 125 mL
 
1/2 tsp vanilla 2mL
 
2 cups all-purpose flour 500 mL
 
2 tsp baking soda 10 mL
 
1/2 cup chocolate chunks(or cut up a plain chocolate bar) 125 mL

Directions

In a large bowl, combine bananas, Miracle Whip, sugar and vanilla.
In another bowl, whisk together flour and baking soda.
Fold into the banana mixture and stir just until blended.
Fold in chocolate chunks.
Spoon batter into prepared muffin tin.
Bake in preheated oven for 20 minutes or until golden brown.
NOTE: You could use chocolate chips in place of the chocolate chunks.
Using the Miracle Whip means you don't have to add an egg to this recipe, and the muffins are nice and moist.
