Chocolate Chip Banana Muffins Recipe
Chocolate chip banana muffins are perfectly blanced blend of the flavors of chocolate and ripe bananas. Flavored with vanilla, the medley of tastes of these muffins are sure to take you by surprise. The flavors of the bananas, vanilla and chocolate chips complement each other totally in this sweet little recipe.
Ingredients
2 ripe bananas
l tsp baking soda 5mL
l tsp hot water 5mL
1/2 cup margarine or vegetable oil 125 mL
3/4 cup granulated sugar 175 mL
1 egg, beaten
l tsp vanilla 5mL
11/2 cups all-purpose flour 375 mL
l tsp baking powder 5mL
l tsp salt 5mL
5oz chocolate chips 150 g
Directions
In a medium bowl, mash bananas.
Add baking soda and hot water and set aside.
In a large bowl, cream together margarine and sugar.
Add egg and vanilla; mix well.
Add flour, baking powder and salt.
Add banana mixture and blend together.
Add chocolate chips; stir just until moistened.
Spoon batter into prepared muffin tin.
Bake in preheated oven for 15 to 20 minutes.

Yes you can. However, the substitution wont be exact and you will have to refer to the usage manual that comes with a pack of splenda. Also cream margarine on its own and then add splenda to it, they wont cream together.
