Directions

In a medium bowl, mash bananas.
Add baking soda and hot water and set aside.
In a large bowl, cream together margarine and sugar.
Add egg and vanilla; mix well.
Add flour, baking powder and salt.
Add banana mixture and blend together.
Add chocolate chips; stir just until moistened.
Spoon batter into prepared muffin tin.
Bake in preheated oven for 15 to 20 minutes.

Yes you can. However, the substitution wont be exact and you will have to refer to the usage manual that comes with a pack of splenda. Also cream margarine on its own and then add splenda to it, they wont cream together.

Hi Lee, The splenda pack will have a subsitution formula for sugar indicating how many grams of sugar can be replaced with how much of splenda. Please refer to that inorder to make the muffins using splenda.
