Chocolate Cherry Meringue Recipe
The chocolate cherry meringue is a very indulgent cake topped with meringues. The chocolate cake is topped with custard and cherries and added meringues. Baked to a finish, the chocolate chery meringue cake is indulgent and creamy.
Ingredients
1 portion chocolate cake
1/2 tin glace cherries
500ml. full cream milk
2 tbsp. custard powder
4 tbsp. sugar
For the meringue
4 egg whites
30 gms. castor sugar
Directions
Boil milk, in a 1.5litre dish, on 100%power for 5:00 minutes.
Add the custard powder and sugar.
Mix and microwave on 80%powerfor 6:00 minutes.
Stir twice during cooking.
Allow to cool slightly Beat the egg whites, until soft peaks form, gradually add the sugar and beat well, until the sugar dissolves.
Divide the cake into 6 oven proof dishes.
Place the cherries on top and pour in the custard.
Top with the meringue.
Pre heat the oven on 'convection' at 180°C .
Bake the meringue, on the low rack, at 180°C for 30:00 minutes.
Add the custard powder and sugar.
