Chocolate Cake With Fresh Cream Topping Recipe
Ingredients
2 large eggs
85 grams (3 oz.) sugar
3 tablespoons melted butter or margarine
40 grams (1 1/2 oz.) self-raising flour
1 teaspoon vanilla essence
1 tablespoon cocoa
2 teaspoons powdered sugar with 2 to 3 tablespoons rum or brandy (optional) for the syrup
200 grams (7 oz.) fresh cream (approx.) with 4 tablespoons powdered sugar (approx.)
2 tablespoons chopped walnuts and a little grated chocolate for decoration
Directions
1. Grease and dust a 150 mm. (6") diameter baking tin.
2. Sieve the flour and cocoa together.
3. Beat the eggs and sugar very well until thick and double in quantity. This should take 4 to 5 minutes.
4. Add the flour, melted butter, vanilla essence and 2 tablespoons of hot water. Mix very well.
5. Pour the mixture into the prepared baking tin.
6. Bake in a hot oven at 400°F. for 15 to 20 minutes. Cool the cake.
7. Divide the cake horizontally into 3 equal parts.
8. Dissolve 2 teaspoons of powdered sugar in 1/2 teacup of water. If you like, add 2 to 3 tablespoons of rum or brandy to the syrup.
9. Sprinkle this syrup over the cake and allow to soak. Repeat after 10 minutes. Be sure that the cake is moist.
10. Beat the cream and sugar very well.
11. Apply some sweetened cream over one part of the cake and put another part over it. Apply some sweetened cream on the top of this and put the third part on top. Cover the cake fully with the rest of the sweetened cream.
12. Sprinkle the walnuts and grated chocolate on top.
13. Chill the cake.
Cut into slices and serve.
