Applesauce Chocolate Cake Recipe
Ingredients
1/2 cup salad oil
2 squares semi sweet baking chocolate
2 cups all purpose flour
1 cup granulated sugar
1 1/2 tablespoons cornstarch
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon each salt and ground cloves
1/2 cup raisins
1 cup chopped nuts
1 can applesauce
1 egg, lightly beaten
Powdered sugar
Directions
In a 10 ounce custard cup, place oil and chocolate.
Cover with wax paper.
Microwave on HIGH (100%) for 1 1/2 minutes.
Stir mixture until chocolate melts; set aside.
In a medium size bowl, stir together flour, sugar, cornstarch, baking soda, cinnamon, nutmeg, salt, cloves, raisins, and nuts.
Add applesauce, chocolate mixture, and egg; blend well.
Pour into a lightly greased 7 by 11 inch baking dish.
Shield each corner with a 2 inch triangle of foil.
Microwave on MEDIUM (50%) for 8 minutes, rotating dish 1/2 turn after 4 minutes.
Microwave on HIGH (100%) for 2 to 4 minutes, removing foil shields after 2 minutes.
Cake should spring back when lightly pressed in center; moist spots, when touched, should come off on your finger and cake underneath should be dry.
Let cool in dish.
Before serving, sprinkle with powdered sugar, if desired.
