Chocolate Yule Log Recipe
Ingredients
| 3/4 cup unbleached white flour | ||
| Cocoa | 1/4 Cup (16 tbs) (Cake:) | |
| Baking powder | 1 Teaspoon (Cake:) | |
| 2 eggs, room temperature | ||
| 2 egg whites, room temperature | ||
| Sugar | 1/2 Cup (16 tbs) (Cake:) | |
| Water | 1/3 Cup (16 tbs) (Cake:) | |
| Vanilla | 1 Teaspoon (Cake:) | |
| Cranberries coated with egg white and rolled in sugar | ||
| Greens | ||
Directions
Sift flour, cocoa and baking powder three times.
Set aside.
Whip eggs and egg whites for 3 minutes.
Add sugar gradually and whip for 3 minutes more.
Fold in water and vanilla.
Gently fold in flour mixture.
Pour into a lightly greased 15" x 10" x 1 1/2" jelly roll pan lined with parchment or waxed paper.
Bake at 350° for 12 to 15 minutes.
Invert onto a waxed paper-lined towel.
Remove paper from bottom of cake.
Roll up cake and towel from narrow end.
Cool.
Unroll and spread filling evenly over cake.
Roll up and place on a serving plate, seam side down.
Ice to look like a log.
Decorate with greens and cranberries.
