 3 x 120 g (4 1/2 oz) packs chocolate sticks
 Single quantity Dark Chocolate Ganache or double quantity Chocolate Fudge Icing
 Chocolate300 Gram
 Roses50 Gram

Directions

1. Trim the chocolate sticks so that they are 1 cm (1/2 inch) longer than the depth of the cake. Place the cake on the plate and use a palette knife to spread the ganache or fudge icing over the top and sides.
2. While the icing is still soft, secure the chocolate sticks, spacing them fractionally apart, around the sides of the cake.
3. Arrange the truffles over the top of the cake and scatter over the roses. Tie the ribbon around the cake, finishing with a bow.
