Chocolate Oatmeal Peanut Bars Recipe
Ingredients
| Butter/Margarine | 2/3 Cup (16 tbs), softened | |
| Firmly packed brown sugar | 1/2 Cup (16 tbs) | |
| Light corn syrup | 1/2 Cup (16 tbs) | |
| Vanilla | 2 Teaspoon | |
| 4 cups quick-cooking rolled oats | ||
| Semi-sweet chocolate chocolate chips package | 1 | |
| Creamy peanut butter | 2/3 Cup (16 tbs) | |
| 1/3 cup chopped dry-roasted peanuts | ||
Directions
In large bowl of an electric mixer, beat butter and sugar until creamy; stir in corn syrup, vanilla, and oats, blending thoroughly.
Pat dough evenly over bottom of a greased 9 by 13-inch baking pan.
Bake in a 350° oven for about 20 minutes or until golden around edges; let cool in pan on a rack, then cover and refrigerate until cold.
Meanwhile, place chocolate chips and peanut butter in a 1 1/2 to 2-quart pan.
Stir over very low heat until melted and smooth.
Spread mixture evenly over baked crust; sprinkle with peanuts.
Refrigerate until topping firms slightly (about 15 minutes); then cut into bars about 1 by 2 inches.
Store, covered, in refrigerator
