Directions
Peel off a few chocolate shavings with a vegetable peeler and set aside for decoration.
Melt the chocolate in a microwave, following the maker's instructions, or in a bowl set over a pan of barely simmering water (the bowl must not touch the water).
Bring the whipping cream to the boil and pour onto the melted chocolate, beating briskly with a balloon whisk.
Beat the egg whites with the caster sugar until they form stiff peaks.
Add a quarter of the egg whites to the chocolate mixture, whisking well in.
Then gently fold in the remaining egg whites to achieve a smooth, even texture.
Turn into a serving dish or individual glass dishes and chill in the refrigerator for 3 hours.
Just before serving, decorate with chocolate shavings.
