Chocolate Mint Gelatin Recipe

Ingredients

 
1/4 cup cocoa
 
3 tsp granulated sugar replacement
 
1 env. unflavored gelatin
 
1 cup boiling water
 
1/2 cup plain nonfat yogurt
 
2 tsp mint extract
 
1/2 tsp vanilla extract
 
1/2 cup cold water
 
1 cup nondairy whipped topping

Directions

Combine cocoa, sugar replacement, and gelatin in medium-sized mixing bowl.
Stir to mix.
Pour boiling water over mixture and stir to completely dissolve ingredients.
Stir in yogurt, extracts and cold water.
Pour into 2 cup (500 mL) decorative mold.
Chill until set.
Unmold and decorate with nondairy whipped topping.
