Chocolate Loaf Cake Recipe
Ingredients
| Cake flour | 1 1/2 Cup (16 tbs), sifted | |
| Sugar | 1 1/4 Cup (16 tbs) | |
| Cocoa | 1/2 Cup (16 tbs) | |
| Baking soda | 1 1/4 Teaspoon | |
| Salt | 1 Teaspoon | |
| Shortening | 2/3 Cup (16 tbs) | |
| Buttermilk OR Thick Sour Cream - 1 cup | ||
| Vanilla extract | 1 Teaspoon | |
| Eggs - 2 nos, unbeaten | ||
Directions
GETTING READY
1) Preheat the oven to 350F.
2) Grease and flour a 9X5X3" baking pan.
MAKING
3) Into a bowl sift together the cake flour, sugar, cocoa, baking powder and salt.
4) Stir in the milk and vanilla. Using a hand-held mixer, blend for about 200 strokes.
5) Add in the eggs next and blend for 2 more minutes.
6) Transfer the mixture to the baking pan.
7) Bake for about 60 minutes.
8) Allow the Chocolate Loaf Cake to cool outside the baking pan.
SERVING
9) Serve the cake at room temperature frosted with butterscotch chocolate frosting.
