Chocolate Loaf Cake Recipe
Ingredients
Cake:
2 cup flour
2 cup sugar
1/2 cup cocoa
1 Tbsp. soda
1/2 tsp. Salt
1 cup sour milk (or 3/4 cup milk mixed with 1/4 cup vinegar)
3/4 cup oil
1 egg
1 tsp. vanilla
1 cup hot water
Icing:
1 stick margarine
1 box powdered sugar, sifted
3 Tbsp. cocoa
Chopped nuts (optional)
6 Tbsp. water
Directions
Cake: Preheat oven to 325°.
Grease and flour 13 x 9-inch pan.
Mix dry ingredients.
Make a well in center and add milk, oil, eggs and vanilla.
Mix well.
Do not use electric mixer as it will make the batter too thin.
Add hot water and mix.
Bake approximately 35 minutes.
When edges of cake begin to pull away from pan, cake is done.
Center of cake will appear not to be firm, but remove from oven, as it will be done.
Icing: In a saucepan, combine margarine, cocoa and water and bring to a boil.
Remove from heat and stir in powdered sugar, and nuts, if desired.
Spread on cake.
