Ingredients
1/2 cup butter
1 cup brown sugar
1 egg, beaten
1 tsp vanilla extract
1 cup figs, chopped
2 cups commercial puffed rice
12 oz semisweet chocolate
1/4 cup grated coconut
Directions
In a saucepan, cream butter and brown sugar.
Fold in egg and vanilla extract.
Mix in figs.
Over moderate heat, while stirring, cook 5-7 minutes or until brown sugar and butter have melted.
Off heat, mix in puffed rice.
Let cool slightly.
Shape into balls, using 2 tbsp (30 mL) mixture for each.
Refrigerate.
In a double boiler, melt chocolate.
Mix in coconut.
Remove balls from refrigerator.
Using a fork, dip each ball in chocolate.
Drain.
Let cool on a cookie sheet.
