Directions

MAKING
1. In a medium saucepan, put together gelatin, sugar, and cocoa; mix well.
2. In another bowl, beat egg yolks with 1 cup of skimmed milk; add to the gelatine mixture and blend well.
3. Heat pan over low heat; stir and heat for about 5 minutes until gelatine dissolves.
4. Stir in remaining 1 cup of milk and vanilla.

FINALISING
5. Chill mixture in freezer; occasionally stir and refreeze until mixture mounds slightly when dropped from a spoon.
6. In another large bowl, beat egg whites with an electric mixer until soft peaks are formed.
7. Gradually add and beat in gelatin mixture for about 5 minutes until mixture doubles in volume.
8. Into a 4 cup dessert bowl or 8 small dessert bowls, pour the mixture and chill in freezer for about 4 hours until set.

SERVING
9. Serve chilled Chocolate Cloud.
