Chocolate Chip Meringue Drops Recipe
Chocolate chip meringue drops is a lovely baked dessert cookie. Made with egg whites and cocoa powder along with chocolate chips, the chocolate chip meringue drops are flavored with a hint of vanilla. It€™s a great hit with kids!
Ingredients
2 large egg whites
1/2 cup sugar
1 teaspoon vanilla extract
3 tablespoons cocoa powder
1/2 cup semisweet chocolate chips
Directions
Preheat the oven to 250°F.
Line 2 baking sheets with baking parchment or aluminum foil and set aside.
In the large bowl of an electric mixer, beat the egg whites at moderately high speed until they hold stiff peaks.
Beat in the sugar, 1 tablespoon at a time, then beat in the vanilla extract.
Reduce the speed to low and beat in the cocoa powder.
With a rubber spatula, fold in the chocolate chips.
Drop the mixture by rounded teaspoonfuls onto the baking sheets, spacing the cookies 1 inch apart, and bake for 1 hour.
Turn off the oven and dry the cookies in the oven 2 hours longer.
Remove them and store in an airtight container.
