1. Preheat oven to 340° F. (You don't have to measure this; just set your thermometer between 325° and 350°). Grease a cookie sheet lightly.
2. Cream butter and sugars until light. Add eggs and vanilla, being careful not to overheat.
3. Sift in dry ingredients and mix well. Stir in chips and, if desired, nuts.
4. Drop large tablespoons of dough onto cookie sheet. Bake 12 minutes, or until the cookies are brown at the edge but soft in the middle. Cool cookie sheet between batches.
