Chocolate Cherry Oatmeal Bars Recipe
Ingredients
| All purpose flour | 1 Cup (16 tbs) | |
| Unsweetened cocoa powder | 3 Tablespoon | |
| Baking powder | 1/2 Teaspoon | |
| Baking soda | 1/2 Teaspoon | |
| Butter/Margarine | 1/2 Cup (16 tbs), softened | |
| Granulated Sugar | 3/4 Cup (16 tbs) | |
| Packed brown sugar | 1/2 Cup (16 tbs) | |
| Eggs | 2 | |
| Vanilla | 1/2 Teaspoon | |
| 1 cup quick-cooking rolled oats | ||
| 1/2 cup dried tart red cherries or cranberries, snipped | ||
| 1/2 cup semisweet chocolate pieces | ||
| Walnuts | 1/4 Cup (16 tbs), chopped | |
Directions
1. Lightly grease an 11 x 7 x 1 1/2-inch baking pan. In a bowl combine flour, cocoa, baking powder, and baking soda; set aside.
2. In a large mixing bowl beat together butter and sugars with an electric mixer on medium to high speed till fluffy. Add eggs and vanilla; beat till smooth. Add flour mixture; beat till combined. Using a wooden spoon, stir in oats, fruit, chocolate pieces, and nuts. Spread in prepared pan. Bake bars in a 375° oven about 30 minutes or till a wooden toothpick inserted near center comes out clean. Cool in the pan on a wire rack. Cut into bars.
