Chocolate Butter Cream Recipe

3 egg yolks
3 tablespoons rum
1/2 cup sugar
4 squares unsweetened chocolate
1 teaspoon vanilla
1 cup (2 sticks) butter or margarine
1 cup heavy cream
Directions
1. Beat egg yolks with rum until thick in small bowl of electric mixer at high speed; beat in sugar, 1 tablespoon at a time, until fluffy.
2. Melt chocolate in top of double boiler over simmering water; stir in egg mixture. Cook, stirring constantly, about 1 minute, or until mixture thickens; remove from heat. Beat in vanilla; cool slightly.
3. Beat butter or margarine in large bowl of mixer at medium speed; beat in chocolate mixture gradually! (Mixture will be thin, but will thicken as cream is folded in.)
4. Beat cream until stiff in small bowl with mixer at medium speed; fold into chocolate mixture until no streaks of white remain.
