Chives Egg & Almond Canapes Recipe

Ingredients
1/2 cup unblanched almonds
6 hard cooked eggs
2 tablespoons minced fresh chives or 2 teaspoons freeze dried chives
2 teaspoons Dijon mustard
1/4 cup each sour cream and mayonnaise
Salt
9 to 10 thin slices pumpernickel or rye bread
36 to 40 thin cucumber slices
Directions
Spread almonds in a shallow pan and toast in a 350° oven for about 8 minutes or until they have a rich, nutlike aroma.
Let cool slightly, then whirl in a blender or food processor until powdery.
Shred eggs into a medium size bowl.
Add almonds, chives, mustard, sour cream, and mayonnaise; mix until well blended.
Season to taste with salt.
Spread egg mixture on bread slices; quarter each slice.
Top each canape with a cucumber slice.
If made ahead, cover and refrigerate for up to 4 hours.
