Chive Omelette For Six Recipe
Ingredients
8 eggs, separated
2 tablespoons all-purpose flour
3 tablespoons milk
2 teaspoons chopped chives
1/2 teaspoon each salt and onion salt
1/4 teaspoon Worcestershire
Dash pepper
Butter
Directions
Beat egg yolks until creamy; gradually beat in flour, milk, chives, salt, onion salt, worcestershire, and pepper.
Beat egg whites until stiff but not dry.
Fold thoroughly but gently into yolk mixture.
Spoon into a well-buttered, shallow 2-quart casserole that's made of heavy metal or is heat-resistant.
Bank about 20 medium-glowing coals on each side of fire grill and place cooking grill 4 to 6 inches above coals.
Place casserole on grill so that no part of pan is directly over coals.
Cover barbecue and adjust dampers according to manufacturer's directions.
Cook for 13 to 15 minutes or until top is golden brown.
