Ingredients

 
2 Ibs. cut up chitterlings
 
1/2 teaspoon red pepper
 
2 onions, minced
 
3 cloves garlic, minced
 
2 bay leaves
 
2 teaspoons salt
 
2 sprigs thyme
 
1/2 teaspoon black pepper

Directions

Wash the chitterlings and put them to boil in a pot with all the ingredients and 1 quart water.
Cook until tender about 2 hours.
