Ingredients

 1kg floury potatoes, such as King Edward
 Groundnut or vegetable oil, for deep frying
 Sea salt1 To taste

Directions

MAKING
1. For the chips, peel potatoes and chut into wedges of 1.5cm size
2. Place in a pan of cold salt water and bring it to a boil; take the pan off the heat immediately and let the potatoes stand for three minutes or so; drain and let dry on a colander later
3. Heat oil in a deep fryer; add the potato to a chip basket and immerse the basket in oil for five minutes or more until cooked inside and golden outside; drain away the excess oil
4. Reheat the oil and fry the chips another time for five minutes or less till crisp; drain the oil and sprinkle sea salt

SERVING
5. Serve as appropriate
