Chipped Beef Egg Patties Recipe
Ingredients
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| 1/4 cup enriched flour | ||
| Salt | 1/2 Teaspoon | |
| Milk | 1 Cup (16 tbs) | |
| 6 hard-cooked eggs, chopped | ||
| Chopped beef | 1/2 Cup (16 tbs), dried | |
| Onion | 1 Tablespoon, finley chopped | |
| Egg | 1 , beaten | |
| Milk | 1 Tablespoon | |
| Dry bread crumbs | 1/2 Cup (16 tbs) | |
Directions
Melt butter in saucepan; blend in flour.
Add salt.
Add milk all at once, and cook, stirring constantly, till thickened.
Remove from heat.
Add chopped eggs, dried beef, and onion.
Chill mixture about 1 1/2 hours.
Blend beaten egg and milk.
Shape chilled mixture in 3-inch patties.
Dip in milk-egg mixture, then in crumbs.
Cook patties in hot fat till browned, about 5 minutes, turning once.
Add salt.
Add milk all at once, and cook, stirring constantly, till thickened.
