Ingredients
4 green onions, diced (white and green parts)
4 cups (1 L) chicken broth
2 eggs, lightly beaten
1 tsp (5 mL) soy sauce
1 cup (250 mL) watercress leaves
Salt to taste
Directions
Add the green onions to the chicken broth in a 6-cup (1.5 L) microwave-safe bowl.
Cover and microwave at HIGH 10 minutes.
Beat the eggs with the soy sauce.
Slowly pour this mixture into the hot broth, stirring constantly.
