Ingredients

 
1 tablespoon vegetable oil
 
1 stalk celery, sliced diagonally into 1-inch pieces
 
1 small onion, thinly sliced and separated into rings
 
1/4 small head cabbage, coarsely shredded
 
3/4 cup chicken broth
 
2 tablespoons soy sauce
 
1 tablespoon cornstarch
 
2 large boneless chicken breast halves skinned and cut into 1-inch pieces
 
1 cup hot cooked rice

Directions

Pour oil into a preheated wok or large skillet; heat at medium high (325°) for 2 minutes.
Add vegetables; stir-fry 2 minutes.
Remove vegetables from skillet.
Combine chicken broth, soy sauce, and cornstarch; stir well.
Add chicken to skillet, and stir-fry 3 minutes or until lightly browned; add vegetables and chicken broth mixture.
Cover, reduce heat, and simmer 3, minutes or until thickened.
Serve over rice.
