Ingredients
1 cup tomato sauce
2 tsps.crushed garlic
1 tsp. grated fresh ginger
3 tsps. chilli sauce
2 tbsps. Chinese vinegar or cider vinegar
3 level tsps. sugar
2 level tsps. salt
1/2 tsp. pepper, ground,
4 tsps.cornflour, 1/2 cup cold water-mix together
2 tbsps. vegetable oil

Directions
Heat oil in a pan.
Stir fry ginger and garlic on a low heat until it begins to change colour.
Add tomato sauce, chilli sauce, sugar, water and vinegar.
Stir until sugar is dissolved.
Bring to the boil.
Stir well.
Add cornflour mixture, salt, and pepper.
Stir well until thickened.
Use this sauce for fried chicken, fish or lobsters and vegetables.
Serve hot with boiled rice.
