Chinese Fried Rice Recipe

Ingredients
1/2 cup butter or margarine
3 eggs, slightly beaten
3 cups Cooked rice
1 1/2 cups cooked diced chicken, pork, ham or shrimp
1/2 cup (4-ounce can) sliced mushrooms, drained
1/4 cup green onions, cut fine
2 tablespoons soy sauce, Salt and pepper to taste
Directions
Melt butter or margarine in large skillet.
Add eggs, and cook until firm but not hard, stirring with fork.
Add rice, and cook 5 minutes, stirring constantly.
Add remaining ingredients, and cook 10 minutes; if mixture seems dry add 2 tablespoons butter or margarine.
Serve in bowl, or pack in warm buttered mold, and turn out on platter.
