Herbed Chinese Chicken Salad Recipe

The chinese chicken salad is an americanised salad prepared with cooked chicken and fresh vegetables. Flavored with parsley, the chinese chicken salad is dressed with peanut butter, soy sauce and honey along with chili paste for a bit of a kick.

Ingredients

 
1/2 Ib linguine 250 g
 
1 large head iceberg lettuce, chopped (8 cups/2 L) 1
 
1/2 cup chopped fresh cilantro or parsley 125 mL
 
1/4 cup chopped fresh chives or green onions 50 mL
 
2 cups shredded or diced cooked chicken breast (1 lb/500 g raw) 500 mL
 
2 carrots, grated 2
 
1 English cucumber, diced 1
 
Peanut Dressing:
 
1 tbsp peanut butter 15 mL
 
1/2 cup cooked chickpeas 125 mL
 
2 tbsp soy sauce 25 mL
 
1 tbsp honey or molasses 15 mL
 
1/2 tsp hot chili paste, optional Salt and pepper to taste 2 mL

Directions

Bring large pot of water to boil.
Add linguine and cook until tender but firm.
Drain and rinse.
Reserve.
In large bowl, combine lettuce, cilantro, chives, chicken, carrots, cucumber and noodles.
To make dressing, in food processor or blender, combine peanut butter, chickpeas, soy sauce, honey and chili paste.
Taste and season with salt and pepper if necessary.
Toss salad with dressing.
Allow salad to marinate for 1 to 2 hours.
Do not worry if lettuce gets soggy, but if you want crunchy lettuce, add it just before serving.
