Chinese Baked Fish Recipe

Ingredients

 
1/2 kg. fish fillets
 
5 Chinese mushrooms, cleaned, soaked and cut into strips
 
6 slices bacon, cut into strips
 
6 spring onions
 
1 tsp. ginger, sliced
 
1 tsp. salt
 
1/2 tsp. pepper
 
1 1/4 cups stock
 
4 tbsps. butter
 
2 sprigs parsley, finely chopped

Directions

Clean, cut, wash fish and rub salt, ginger and pepper.
Keep aside.
Cut the spring onions into 2" segments.
Drape each piece of fish with bacon and onion strips.
Prepare a baking dish.
Place the fish fillet, cover each piece with mushrooms and put 1 teaspoon butter on each piece of fillet.
Bake in a pre-heated oven (200°C, 400°F Gas Mark) for 10 minutes.
Add the stock and pour it over each piece of fish.
Continue to bake for another 15 minutes.
Serve hot garnished with parsley.
VEGETARIAN VERSION:
Make a few cutlets the size of fish fillets with soaked and finely ground soya granules.
Season well before shaping into cutlets.
Coat with bread crumbs and deep fry.
Follow the recipe from stage 2.
Omit bacon.
Cover the cutlets with 1/2 cup sesame seed sauce and proceed as given above.
